Tiramisu is a beloved Italian dessert, popular worldwide for its rich and indulgent flavour profile. Its name, literally translating to “pick me up,” perfectly captures the dessert’s energising qualities thanks to the combination of coffee and cocoa. But where did this culinary delight originate, and how did it become such a global sensation? Let’s delve into the fascinating history of tiramisu in this article.

What is Tiramisu Exactly?

Tiramisu is a rich dessert typically made with savoiardi, also known as ladyfinger biscuits soaked in coffee (and sometimes a splash of liqueur such as Marsala, amaretto or wine is also added) and layered with a luscious cream made from mascarpone cheese, eggs and sugar. The dessert is then sprinkled with cocoa powder on top. This layering process creates a creamy, coffee-infused dessert that is both indulgent and even invigorating.

Where Did Tiramisu Originate?

It is difficult to trace back the exact history of tiramisu as it has many conflicting stories. One of the most widely accepted origin stories of tiramisu places its creation in Treviso, Italy, in 1800 and we are going to tell you two of the popular narratives among them.

One of the most popular origin stories traces tiramisu to an aphrodisiac food. It is said that tiramisu has been popular in Italian brothels due to its mood-enhancing features. Tiramisu was invented by a “maitresse” of a Treviso brothel to offer her customers at the end of the evening to reinvigorate them when they return to their wives after spending time in the pleasure house. This story made tiramisu a natural Viagra from the 19th century.

To stand by this story, the name “tiramisu” itself translates to “pick me up” in Italian, which can be interpreted to imply its invigorating properties. The combination of creamy mascarpone, the richness of cocoa, and the stimulating effects of coffee creates a high-calorie dessert that is not only indulgent but also potentially mood-enhancing. However, with the popular prudery, this story was kept hidden for centuries. But by the 1980s, it had become a staple in Italian-American restaurants and beyond. Its simplicity, combined with its rich and indulgent flavours, made it an instant hit internationally, including NZ. In fact, approximately 5.93% of restaurants in New Zealand feature tiramisu on their menus, highlighting its presence in the local culinary scene. Isn’t that amazing?

Another story places the credit for tiramisu on a restaurant named Le Beccherie and its pastry chef Roberto Linguanotto who adopted the dessert from another one called “Sbatudin”, a mixture of egg yolks whipped with sugar. This version of Tiramisu quickly gained popularity in Treviso and then spread across Italy.

Variations and Modern Takes

Classic Recipe

The traditional recipe for tiramisu remains a favourite, with its perfect balance of coffee-soaked ladyfingers, creamy mascarpone, and a dusting of cocoa. This classic version has inspired countless adaptations and remains a symbol of Italian culinary excellence.

Innovative Variations

Though the classic one still remains appreciated, modern adaptations of tiramisu include a variety of flavours and presentations. It is said that there are over 200 variations available in this dish. Some versions incorporate fruits, different liqueurs, or even chocolate. Others experiment with the form, offering the original tiramisu as a gelato, semifreddo, in individual servings or even as delicious tiramisu cakes.

Believe it or not, there’s even a Tiramisu World Cup in Italy! Participants compete in two categories: ‘original recipe’ and ‘creative recipe.’ The creative category allows contestants to add three extra ingredients to the classic mascarpone, eggs, coffee, and cocoa. People have tried adding cinnamon, ginger, matcha, pineapple, and even chilli. These innovative take-ups on the classic dessert showcase its versatility and enduring appeal. However, we believe that the original recipe needs to be protected, no matter what.
